Vietnamese Style Bao

{Serves 5 (2 pieces each)}

Ingredients

1 pack of Lotus Leaf Buns 300g (10 pcs)
250g Vinaco Cha lua (Sliced)
1 small carrot (julienned)
1 pack of snow pea shoots (trimmed)
½ bunch coriander
¼ cup Vietnamese mint leaves
¼ cup roasted unsalted peanuts (crushed)

Dressing
⅓ cup rice wine vinegar or cider vinegar
½ cup sugar
3 tbsp fish sauce (add more fish sauce to taste)
1 tsp minced garlic
½ - 1 tsp of chilli flakes (alter to taste) 





 

Method

1. Combine dressing in a bowl till sugar has dissolved. Add carrots to dressing and set aside to absorb the flavours.
2. For the Lotus leaf buns, arrange on a plate and steam for 10 minutes, or microwave on high for 1 minute.
3. Fill buns with 2 slices of cha lua, salad ingredients and carrots (add more sauce if desired). Sprinkle crushed nuts and serve.
