Q  What are HACCP and SQF certifications?

As one of Australia’s leading manufacturers of Asian foods, the concept of food safety and quality underpin everything that we do. Hakka holds both HACCP and SQF (Level 3) certifications, giving our customers superior quality assurance and peace of mind.

HACCP (Hazard Analysis Critical Control Point) is a systematic preventative approach to food safety. It addresses physical, chemical, and biological hazards as a means of prevention rather than finished product inspection. This approach enables us to determine key controls over processes and concentrate resources on activities that are critical to ensuring safe food.

To ensure optimum food safety and quality, Hakka holds itself to an even higher standard of SQF (Safe Quality Food). SQF (Level 3) is a rigorous Food Safety Management System (FSMS) which not only includes food safety fundamentals and a HACCP approach to managing risks and hazards, but also includes stringent quality requirements as part of an integrated system.

Q  What is the difference between dim sum and dim sim?

Dim Sim refers to a Chinese inspired meat dumpling-style snack, consisting of meat, cabbage and spices wrapped in a pastry similar to a traditional dumpling.

Dim Sum in Chinese means ‘point of heart’ as it refers to a small snack or individual portions that were meant to ‘touch the heart’ with every bite. Dim Sum is eaten during the meal occasion known as ‘Yum Cha’. Nowadays these two Chinese terms are commonly used interchangeably.

Q  I was told that some manufacturers use borax in their egg noodles, do Hakka use borax in any of their products?

Borax (or sodium borate and boric acid) is a colourless salt like substance commonly used in ant killers, detergents, cosmetics, pesticides and fertilisers.  Borax is a toxic substance and the Australian Food Standards Code does not permit borax to be used in foods. Unfortunately, there are still many instances where it is used in food preparation to give the crunchy texture in many Asian noodles and meat balls.

As a company that prides itself on producing safe, high quality food to its customers, we do not use Borax in our egg noodles or in any of our products.
