Cooking Instructions
1. Bring a large pot of water to boil.
2. Blanch noodles in hot water for approximately 1 minute or until softened. Drain well and set aside.
3. Prepare your favourite sauce and ingredients.
4. Add noodles to sauce and stir fry to desired texture.
5. Serve hot.
Recipe
Prawn & Mushroom Yi Mein { Serves 4-6 }
Ingredients:
Long Life Fried Egg Noodles
2 Clove garlic (minced)
2 Tablespoon Vegetable Oil
300g Prawns (de-shelled)
12 Dry Shiitake mushrooms (rehydrated & sliced)
3 Stalks of Shallots (cut into 1 inch)
Salt
White Pepper
Sauce (mix in a bowl)
1.5 cups chicken stock
3 Tablespoon Oyster Sauce
1 Teaspoon Dark Soy Sauce
1 Tablespoon Chinese Wine
1 Tablespoon Sesame Oil
Corn starch Mixture
3 Tablespoon Corn starch
3 Tablespoon Cold water
Instructions:
1. Follow the “Preparation Directions” above.
2. Heat up oil in a large saucepan. Add garlic & saute until fragrant. Add mushrooms & prawns. Cook until prawns are pink before adding the shallots. Stir fry for another minute on high heat.
3. Add Sauce mixture into the pan & bring to the boil. Add the corn starch mixture & stir until thickened. Season with salt & white pepper to taste.
4. Turn off the heat & stir noodles into the sauce.
5. Serve hot.
