Roasted Chicken Folds

{Serves 1}  

Cooking Time: 20 mins



1 pc of PA Chilic Pratha
1 Red Bell Pepper
1 Yellow Bell Pepper
A small bunch of rocket or other leafy Greens of your choice.
1 Tomato, thinly sliced
200g skinless chicken breast
2 slices of cheddar cheese
Pinch of salt

Seasoning Sauce

1/2 cups mayonnaise
1 large garlic clove, minced
Pinch of salt
Optional - 1 chilli, sliced.



1. Make seasoning sauce by mixing mayonnaise, garlic and chilies. Season with salt and pepper to taste.
2. Char bell peppers over gas flame or in a grill until blackened on all sides.
3. Pan fry PA Chilic Pratha for 3 minutes on both sides.
4. Preheat oven to 180ºC. Brush chicken with oil and sprinkle with salt and pepper. Bake for 20 - 30 minutes or until cooked through.
5. Take the chicken out of the oven, top with cheese and heat in the oven for 1 minutes at 180ºC or until cheese melts.
6. Transfer chicken on the pratha. Add bell peppers, mixed greens, tomatoes and seasoning sauce  and fold it.
