Prawn and Mushroom Yi Mein (Fried Egg Noodles)

{Serves 4}

2 pcs (150g each) Hakka Fried Egg Noodles 300g (Yi Mein)

2 clove garlic (minced)
2 Tbsp Vegetable Oil
300g Prawns (de-shelled)
12 Dry Shiitake mushrooms (rehydrated and sliced) 
3 stalks of Shallots (cut into 1 inch)
White Pepper

Sauce (mix in a bowl)

1.5 cups chicken stock
3 Tbsp Oyster Sauce
1 Tsp Dark Soy Sauce
1 Tbsp Chinese Wine
1 Tbsp Sesame Oil

Corn Starch Mixture

3 Tbsp corn starch, 3 Tbsp water



1. Follow the “Preparation Directions” above. 
2. Heat up oil in a large saucepan. Add garlic and saute until fragrant. Add mushrooms and prawns. Cook until prawns are pink before adding the shallots. Stir fry for another minute on high heat.
3. Add Sauce mixture into the pan and bring to the boil. Add the corn starch mixture and stir until thickened. Season with salt and white pepper to taste.
4. Turn off the heat and stir in the noodles.
5. Serve hot
